Saga noti -This is a salty-sweet fried pinwheel bread.

INGREDIENTS

Salty dough

  • 250g all purpose flour
  • 1/2 tsp of salt
  • 1/2 tbsp of cardamom powder
  • 1/2 tbsp of yeast
  • warm milk for kneading

Sugar dough

  • 250 g all purpose flour
  • 2 tbsp of sugar
  • 1/2 tbsp of cardamom powder
  • 1/2 tbsp of yeast
  • Warm milk for kneading

Simple syrup

  • 250 ml of water
  • 250 g sugar
  • 1 tsp cardamom powder

METHOD

  1. Salty dough : Add all the dry ingredients in a bowl and mix well. Pour in warm milk in bits while kneading. Keep kneading until the dough is soft. Place it on a small bowl or plate and cover with a clean cloth. Label if need be.

  3. Let both dough rest for about one hour.
  4. Pick the salty dough , on a clean surface, dust with flour and roll into a thin round shape. do the same for the sugar dough. make sure they are the same size.
  5. Place the sugar dough on top of the salty dough.

6. Fold into a log, at the end , to hold together, use a water flour glue.

7. Cut into small pieces, using either a string or a sharp knife.

8. Cover with a clean cloth for 15- 20 min.

9. Heat cooking oil in a cooking pan. Deep fry in medium heat until golden brown on both sides. Let cool.

10.Simple syrup : Place sugar, water and cardamom in a sauce pan. Bring to simmer as you stir until sugar completely dissolves. Remove from heat, add the fried saga noti to the syrup and coat fully.

11. Remove from syrup and serve with tea, coffee or juice.

TOOLS

  • Small saucepan
  • Lemon juicer
  • Pitcher/ Jug

INGREDIENTS

  • 250 ml water
  • 180g granulated sugar
  • 5-6 lemons
  • 1 tsp of lemon zest.*(optional)
  • 600 ml-750 ml cold water

METHOD

  1. Simple syrup : Place sugar, 250 ml water and lemon zest in a small saucepan.
  2. Bring to simmer as you stir until the sugar completely dissolves.
  3. Remove from heat and let it cool before straining out the zest.
  4. Juice the lemons as you wait for the simple syrup to cool.It should make at least one cup of lemon juice.
  5. Pour the lemon juice and simple syrup into a pitcher. Add the cold water to your preferred taste. The more water you add, the more diluted it will be.
  6. Chill in the refrigerator for 40 min to one hour.
  7. Serve with sliced lemons.

You can add different fruits to adjust the flavour to your liking.

Pineapple lemonade

  • Add a cup of pineapple juice into the lemonade before chilling it in the refrigerator.

Strawberry lemonade

  • Add some strawberry puree into the lemonade before chilling it in the refrigerator.

Mint lemonade

  • Chop 1/2 cup of mint (about 15 g) and stir into the lemonade before chilling it in the refrigerator.

Vodka lemonade

  • Add vodka ,according to your liking, into the lemonade before chilling in the refrigerator.
